ProChile to Host Taste Chile! In Fort Lauderdale to Celebrate Chilean Gastronomy

Chilean Culinary Star Pilar Rodriguez to Feature Unique Chilean Menu at Da Campo Osteria June 1-6, 2009

The program was designed to promote Chile's authentic cuisine, exotic gourmet food products, and premium wines to the patrons of Chef Todd English's acclaimed restaurant, Da Campo Osteria.

Throughout the week, the restaurant will feature a special Chilean menu (alongside its traditional menu), which was developed by renowned Chilean Chef Pilar Rodriguez who has traveled to Fort Lauderdale specifically for this event. The five course tasting menu will be paired with a selection of top Chilean wines and will spotlight Chile's indigenous gourmet ingredients such as the Mapuche spice blend Merken, extra virgin olive and avocado oils, carica - unique Chilean fruit, Chilean salmon, flavored vinegars, as well as preserved fruits and jams. Chef Rodriguez's cooking style is unique in that she designs her menus according to the wines that she pairs with each course. Her famous "cooking for the wine" technique is what distinguishes her among other chefs, both in Chile and worldwide.

About Chef Pilar Rodriguez

As a graduate of "Le Cordon Bleu" cooking school in Paris, Chef Rodriguez's cooking style is based on a foundation of traditional French techniques. After returning to her native Chile, she established a catering and consulting company called Comida y Vino (Food and Wine) in the Colchagua Valley wine region of Chile. In her work she forged a unique path by using her passion for wine, imaginative and innovative culinary techniques to ultimately develop a brand new style of cuisine that highlights her country's acclaimed wines.
